Making Bread Saturday Dec 3rd 2022

I love home baked bread cooked in a dutch oven inside an oven at 420 F for 30 min so it develops a nice flavorful crusty crust. 


To enjoy it, I slice it, mix aged basaltic vinegar with cold expelled extra virgin olive oil & dip the bread into this mix or enjoy the bread with salted butter.

Ingredients

  • 1 egg, room temperature
  • enough water with egg to measure 1 cup, warm
  • 2 T olive oil
  • 3 T honey
  • 2 tsp sea salt
  • 3 C ancient grain flour of your choice
  • 1 1/2 tsp quick rising yeast (I used 2 since mine was older, stored in fridge) 

Instructions / Procedure

  • Make it by hand by mixing egg, water, oil, and honey in a medium bowl
    In a larger bowl mix flour, salt, and yeast together
    Slowly add wet ingredients to the dry ingredients & incorporate the mixture 
    Once ingredients are mixed, knead for ~10 minutes. I do it free hand in the air, flattening the dough into a disk, then folding over the disk on itself, repeating this 60x or more / a method like Damascus steel making.
    Clean up the large dough bowl with the dough to recover all the flower, then put a splash of olive oil in the bowl to grease it. Pace the dough ball into the bowl and cover with a damp towel until it doubles in size. 
    I then beat the dough down free hand in the air kneeding it & put it back in the bowl & cover it again & repeat this procedure 4 more times over a 5 hours period roughly. This enhanced the texture & flavor more, something almost no commercial bakers do because of the time required! 
  • Bake at 350 for about 25 minutes.
    I bake it inside a cast iron enabled dutch oven at 420 F for ~30 minutes.
