Mini Cheese Cake Recipe

Inspired by watching Business Insiders video about Junior's Cheesecake company in New York that we watched on YouTube, I had the idea to make a mini cheese cake for Meg & I as part of my DIY baking hobby during Spring Break since I have a little time off as a School Bus Driver :) See more to review the recipe to give it a try :) 

Mini Cheesecake Recipe 

Ingredients 


* 7 oz cream cheese (or 8oz) I used 7 oz we had on hand
* 1/4 or 1/3 cup sugar, we used 1/4 
* 1 large egg or 2 small eggs, we used 
* 1 tsp vanilla extract or more if you like 
* 2 tbsp half& half or heavy cream; I used half & half 


Procedure


In a medium bowl, combine ingredients then blend till smooth batter forms with a hand mixer started on low speed setting & then turned up to the highest setting to make extra smooth batter. 

Pour batter into two ceramic baking cups, mugs, or similar glass containers that are mostly filled with half the batter. Add a pinch of salt to the top to boost the flavor since salt with a sweet item, especially a savory sweet item makes it taste a lot better. 


Place both baking cups filled with the smooth mixture into a water bath pan, rimmed pan, baking pan, anything that can hold your baking cups & an inch of so of water around the base of the cups filled with the cream cheese mix. 

Bake 20 min at 350 F 


Remove the assembly, pour off the hot water, carefully take out the ceramic mugs with the bake cheesecake & let them air cool for 20 min and enjoy warm or place them into the fridge covered with plastic warp or aluminum foil or parchment paper to keep gunk out and chill them to enjoy the cheesecake cold. You can add toppings like chocolate, coffee syrup, left over coffee, jam, nut butters, whatever floats your flavor boat for enjoyment :)
