Dish Sterilization : A Case for Dishwashing Sanitization 150+ deg F hot rinse modes!

Hand washing dishes to a sanitary state cannot be accomplished at 175 deg F ( 80 deg C) because elevated temperatures in this range cause skin scalding (thermal denaturing of the skin & sub dermal layers of the skin on your hands. Some automatic dishwashing machines have a heating element to raise the water temperature to sterilizing levels to accomplish sanitary hot rinse cleaning of your dishes.

@ 175 deg F for 10min all active bacteria, yeast and fungi are destroyed.

We create a fair amount of dishes given our predominately grocery store food from home breakfast, lunch and dinner foods. I was studying was to optimize time saving when washing dishes and found scientific literature about food processing, industrial kitchens, dishwasher appliance designs, and the related sanitization materials to create the empirical knowledge base basis of this posting. As a scientist I often review many source of materials before developing an analytical protocol to form the base materials for my writings.

NSF / ANSI Standard 184

99.99% bacteria in "Sanitize" 150 deg F high final rinse; Effective along with the use of cleaning chemicals during the low temperature cycles, Meg & I try to use eco-friendly cleaning chemicals in our washing machine. This means the rough washing stages can be done @ lower temperatures appropriate for hand washing.

We divert biomass from our plates & prepping to a compost container that ultimately becomes hot compost at the local yard waste composting recycler. Meg * I also cold or warm rinse our dishes of residues before putting them in the washing machine to improve sanitization & cleanliness of our dishes. Food born illnesses caused by unsanitary flatware rob people of life with gastroenteritis and other digestive disorders giving rise to preventable sickness.

Dishwashing machines make use of electric motors, pumps, electronic valves, a controller with USER cycle selection input, hot water, dishwasher detergent, time & electrical energy to spray the dishes with hot water between 110 deg & 170 deg F (45-75 deg C)

Booster heaters can drive the hot rinse sanitization cycle temperatures to 180 deg F

Special filtering cleans up interstage cycling, allowing clean water reuse during detergent stage for up to 30% water savings. Self clearing filters with a spinning particle grinding pre-filter enhance filter life substantially. This hard food disposal unit behaves like a miniature food waste drain grinder disposal unit that helps the machine clear larger food debris efficiently.

Steel expensive models preserve heat better for enhance drying times & resist hard water mineral, while also providing better sound dampening.

Sensors enhance energy & water savings by sensing temperature change and dirt in the rinse water and adjusting heat & cycle times accordingly with a microprocessor controller.

Steel high end heat exchanger models cool the liner of the machine to assist drying with condensation trapping.

Use eco safe detergents to prevent drainage of toxins from your machine.

Harsh chemical cleaner also etch/ fog glass containers, can damage pan coatings, while damaging the fine edge of steel cutlery alloys, and can cause ceramics that are not dishwasher safe to become damaged. Some plastic items & bonded items can be damaged by the heat of operation, so hand wash delicate items, antiques or other special items. Painted items can be faded by the dish washer detergents & high heat over time.
